My 3rd WIAW!

Posted by Jennifer (the student)

Hi everyone! Happy WIAW! I cannot believe this will be my third WIAW already. This week is crazy busy for me with finals next week. Right now, I am trying for healthy and simple. Thank you to Jenn at Peas and Crayons for hosting.

This is what I ate:

Pre-Breakfast (6:30 am)

Coffee with hazelnut milk and stevia in my new β€œspecial mug.” I swear everything in this mug tastes better. πŸ™‚ I am a huge anglophile, ever since I spent a semester in England years ago.

Breakfast (7:30 am)

Uncle Sam Cereal with slivered almonds, agave nectar, and hazelnut milk. I love this cereal, it reminds me of my grandmother. It was a special treat at her house.

Mid-Morning Snack (9:00 am)

Red grapes with raw cashews.

Β Lunch (1:00 pm)

Spinach and mushroom enchiladas with refried beans and rice. Sorry this picture is so dark, we were in a very dark corner. I had lunch with my parents after my mother’s eye surgery.

Mid-Afternoon Snack (3:00 pm)

Decaf ice blended vanilla with soy milk from Coffee Bean.

My afternoon pick me up!

Β

Dinner (5:30 pm)

Semi-homemade whole-wheat pizza with roasted zucchini, roasted mushrooms, and Daiya mozzarella topped with a green salad. I used Trader Joe’s pizza dough; I think it is pretty good for a quick meal.

Thank you for joining me this WIAW! I hope your day is full of healthy meals. πŸ™‚

    • Thanks! I know you eat well too. Maybe over the summer you will join the WIAW party a few times πŸ™‚

      • Fran, the mug came from a gift shop in claremont village called Barbara Cheatley 909 621-4161. And the manufacturer of the mug is Emma Bridgewater. I hope this helps. πŸ™‚

    • Thank you! She is doing well, 20/20 in her right eye. Next month, they will do her left eye. πŸ™‚

  1. That mug is sooo cute! How big is it? I myself enjoy a big mug for my morning tea (which is sometimes hard to come by)!! GAH! Those pizzas look amazing. I’m thinking you should express deliver one of those babies to my house for lunch, mmmmkay? πŸ˜‰

    • Thank you! It is sort of a medium size mug, my last mugs was so large. I am trying to scale back my coffee drinking. πŸ™‚ Thanks again. Have a great WIAW!

  2. Love your Jubilee mug! I just got back from spending the semester in London and I am seriously in UK withdraw. Did you bring a bag of UK food back with you like me? I had to explain to customs all I had were digestive biscuits and Ribena!

    • Thank you! I understand UK withdrawal! Yes, I also brought a bag of UK food home. πŸ™‚ I can’t wait until I am able to go again!

  3. I’m in the finals boat with you too! I also agree about everything tasting better from a mug. I have a Savannah, GA mug a friend of mine bought for me when they were down there on vacation and I use it all the time.
I love making pizza at home with TJ’s dough. It’s a deal and delish deal.

    • Thank you! It was a gift. I asked and it came from a little shop called Barbara Cheatley in claremont village, California. It was manufactured by Emma Bridgewater. Hope this helps. πŸ™‚
